Wishlist!

What's on your wishlist? Being a college student leaves me completely strapped for cash but I have been eyeing these things:

A rear bike rack so I can carry things to and from the grocery store. This is important so I'll be purchasing it ASAP. It's $30 on Amazon which I don't think is too bad.

This sippy top stainless steel water bottle!! I don't think I've ever seen one in real life.

Rawtella!! How amazing must this be?

Did you know VANS was coming out with a Hello Kitty line!? I just might have to... I absolutely adored Hello Kitty as a child and I think these are pretty cute, especially for summer.

How cute is this necklace by Truche on Etsy? I guess there is this huge scandal where Urban Outfitters just came out with this exact design on their website. According to her Etsy account though, it seems that she has been getting business due to people finding out about this. Good for her! And if Urban Outfitters really did steal this that's disgusting.

I'm also still on the look out for a super cute dress. Nothing fancy or frilly. Something "me." I actually now remember I had a dream that I found a really cute anchor dress at a thrift store. Is that a sign to go thrifting today!? Perhaps!

Have a good weekend!

Movie Night + Baked Tofu

So, I made some kinda asparagus/garlic/tofu bake last night.

Just chopped up the garlic--layered on the bottom, layered artichokes and then for the tofu breading I just threw some olive oil and breadcrumbs in a bag, put the tofu in, shook it up, and voila! Baked it for about 30 minutes and then served it over brown rice :)

We also watched this last night while eating dinner and I actually really liked it...not exactly what I thought it was going to be about which was good!

YAY FRIDAY! I actually have tomorrow off :) Need to think of something awesome to do!

Against Me!

Last night we went to a sold out Against Me! show in Gainesville, FL. I have never been so drenched from a show as last night. The crowd was singing along to every word and it was absolutely nuts. Even my fingers were pruney. However, I FORGOT EARPLUGS!!! My right ear has been ringing off the hook all day. Really hope it gets better tomorrow :-/ Marc is playing a show tonight and there is NO WAY I will forget earplugs. I'm going to buy a bunch to keep in my car. Ringing ears is awful.

However, a great remedy for feeling not-so-awesome is spaghetti, covered in nutritional yeast!! I absolutely love these vegan cheesy flakes of heaven plus many brands contain B12. No 'real bread' for garlic bread? No sweat, had some hotdog buns hanging around so baked them up in the toaster oven! Just olive oil, garlic, italian seasonings, and a sprinkle of daiya. Voila!

And look! I'm wearing shorts!!!! I have been shorts-phobic for years but I'm finally breaking lose. Some awesome leopard print sure does help. Plus check out my awesome shirt from Deadworry on Etsy. They have a TON of cute shirts that are all on my birthday/christmas list. Check them out!!

Hope you're having a good week! KEEP YOUR EARS SAFE!! Remember earplugs

Roots Touchup!

From this:

To this!

Woo! I honestly don't think I have ever redone my roots. I always just dye it back to black or something when it starts growing in but I was really sick of the faded burnt orange color and the fact that I could only style my hair completely down without seeing nothing but roots. The whole process was actually pretty easy.

Apply Bleach. (I use the mix powder with 40 volumizer and a brush).

Watch it turn blonde!

Then I washed it out, conditioned, let dry. Added dye and voila! Happiness is newly dyed hair.

P.S. Check out this wicked Wolverine tattoo I found in a box of childhood things at my Grandma's!

BLT!

Marc made me a delicious vegan BLT for lunch!!!
*Note the cute Hello Kitty face in the toast! hehe, from this:

This is what he used for the bacon:

It was absolutely delicious!!! Just added tomatoes, lettuce, and vegannaise! Pretty cheap idea sure to fool many a meateater. Really, it was deeeelicious!!!

In the process of touching up my hair! I ran low on dye towards the end but I think I managed, we'll see in a few hours (yes, I keep bright colored dye on for multiple hours--helps make it stay in my hair and not wash out!!)

Happy Monday!

All of the food pictures we've taken recently are on Marc's phone, who uploads them to Facebook, except for the fact that neither of us have been able to get Facebook to work properly for the past couple days...anyone else experiencing this? I need to get him to send them to me and then I can email & upload them onto here.

Every morning lately, I wake up and have to immediately get out of bed or I'll keep sneezing. My nose is a morning nightmare. I don't feel sick of lack energy or anything so, allergies!? Ugh, a few coworkers have been complaining of this as well. I live in Florida and lately we've gone from freezing cold rainy days to scorching hot sunny days. Combined with copious amounts of pollen and other allergens =(

I worked all weekend so there isn't TOO much fun to report there. Last night we did however go see Pirates of the Caribbean 4:

We went to this discount theater we live by. It was in 3D so it was still $6 each but that's way better than the $12-13 I'm sure we would have paid at the other theater in town. As anyone who watched the end of the credits of the third one knows, they went on a search for the fountain of youth. I recommend seeing it if you're a Pirates fan..maybe not for $12 but it was definitely worth the $6 :-P

I also never thought of this but you can get workout DVDs through Netflix!! I added this to my queue:
Part of my summer organizing is to get back into shape so I'm hoping this will help. I'm also trying to do some food research to put together awesome meals. I will be sure to report my findings.

I've also been painting my nails again to avoid biting them. Plus I really love being able to paint simple designs on them...but check out the talent of this crafty chick over at The Daily Nail!!!

EEK! I love Dr. Seuss but I don't think my hand would ever be this steady. Props to you!

Here are some things I plan to be posting:
*DIY Clothes Reconstructing
*House Projects
*Vegan Meals & Baking
...and much more!!!

Peanutbutter Blondies

Delicious!!!

I used the recipe from Vegan Cookies Invade Your Cookie Jar but substituted white chocolate chips instead of the peanuts on top. The best part is you only need one bowl!!! Easy cleanup.

It stays together better than this photo, I just could not wait long enough for it to cool completely. Plus, I have some chocolate icecream in the freezer. Hot peanutbutter blondie with cold chocolate icecream!?

YES, PLEASE!

I'm here! I'm here!

We have been doing some MAJOR Spring? Summer? well, CLEANING around this house!! Rearranged the living room so we could fit our bikes in here, rearranged the bedroom, cleaned up the bathroom (ever increasing amount of stuff under the sink), scrubbed down the kitchen, etc. I am also getting rid of BOXES of clothes. I really don't know how I came into ownership of so much stuff!! Most of it is from years ago and I just never got rid of it. I've been much pickier with my purchases as I get older and money gets tighter but that has totally worked in my favor. No more of those wear once and then shove in the back of the closet shirts. I've also been sewing up the clothes I DO want but don't wear because they're too big. I'll post some pictures of those on here soon.

Yesterday I made these oat-based veggie patties from a packet:

You just added water, formed them into patties and cooked. They were VERY seasoned but when eaten with the fresh lettuce, avocado, and tomato, they were very tasty! I also used the rest of the avocado to make some guacamole. My new favorite add-in is Taco Bell's Verde sauce!! That way I don't have to have lime on hand and just throw it in! Perfect.

We also recently went to Gainesville (Rock City) to see Crass's "Last Supper" Tour. It was really awesome. The chick they got to sing the female-led songs was totally rad. Went to Karma Cream (twice, of course):

How cute! I always see these at Whole Foods but they're never vegan!! Little chocolate cup with mocha mousse inside, etc. Delicious!! And, TOFURKEY RUBENS! These were amazing. Who knew I'd eat sauerkraut?

Gonna make some tea and scoot on over to work. What a waste of a Saturday!!
Hope your weekend is free of w-o-r-k.

When being lazy pays off:

Waking up to a slice of this left on your nightstand :D

CUPCAKES!

Everyone loves cupcakes, right? My coworkers sure did! I've been talking up my vegan cupcakes BIG TIME for at least six months now. So when I finally decided to bring some in, there was a lot of pressure! I decided on cookies-n-creme and peanutbutter chocolate. Who doesn't love those combos right? Both of the recipes came from Vegan Cupcakes Take Over the World.

Everyone loved them!! :D

(I only have my phone as a camera so bare with the not-so-awesome photos). Either way, I still think they look delicious!!!

Then, for pre-Mother's Day (Saturday since I worked all of Sunday), I went and visited my Mom! I made a nice summery pasta for lunch and we sat in the patio and talked for a bit. I really enjoyed the pasta! The recipe was from Vegan YumYum but I think it's pretty simple to just guesstimate everything.

It had rotini pasta, sundried tomatoes (but I used regular diced 'cause I'm weird and not a huge fan of sundried), lemon zest mixed with parsley, garlic and breadcrumbs, the secret ingredient crushed red peppers, and I threw on a heaping spoonful of Parma! to top it off. Absolutely delicious! We finished off the whole bowl.

S'ghetti!

So, I love my pasta. When I was younger, all I would eat was noodles and gravy (really, I think it was every day). In my adult life, I have learned to love all shapes and sizes of pasta as well as their sauces. Tonight I made spaghetti (okay, so this isn't so original but it's great for when you get home late and don't want to slave over the stove)!

I used a cheese sauce packet from Road's End instead of my usual Parma (hints the weird creamy look in the Shrek bowl and the dollop of cheesy sauce in the white bowl).
I'm not the biggest Shrek fan but it's still a pretty neat bowl. Handles are handy!
The cheese sauce was really awesome! Call me crazy but it even seemed to have a hint of garlic to it. I think it would be really awesome mixed into a stuffed shells tofu ricotta recipe! That is definitely on my list.

P.S. Road's End makes the alfredo noodles from my post here.

For a snack today I made some sherbet...or what I'd call sherbet at least! The only ingredients were frozen fruits and vanilla almond milk but it was delicious!

Tomorrow is my first day of summer cleaning! I am very excited to get started and will post pictures if I make any noteworthy progress. Have a great night and thamk=you for stopping by my blog!

Really, that's what the gas station told me this weekend ;)

SUMMERTIME!

I'm gonna go with, IT'S OFFICIALLY SUMMER!!! I am more than looking forward to having some free time to get my life organized again. I was doing pretty well for the first few weeks of the year until college started back up. I just finished up the last of my essays and took my last exam last night so I am home free!

See, Summer!!!!!

I have Tuesday off which will begin my cleaning and crafting sweep. Bit of a late start on the whole spring cleaning thing but 'better late than never.' I've been compiling a list of projects and foods to tackle. Check these out!!

1. The whole not biting my nails resolution has been on and off...when I put effort into painting them and find a design I really like, it helps.

2. IDK what those are but don't they look delicious?? Some sort of oreo cupcake. Whatever it is, I will be making something similar this summer.

3. I think the flower on the cuff is such a cute idea! My pants are ALWAYS too long and I've resorted to cuffing them. I think the accessory makes the super long cuff look not-so-daunting.

Happy summer!!

Kristi(E)

P.S. I always save 8 million photos but never attach a source to them. I'll try to do this more in the future and apologize in the meantime for stealing!

Also, NEW BLOG LAYOUT! I know it's not fancy but the colors are inspiring for summer...at least for me! Whatever keeps me typing.
